Banana Pancakes

Winter solstice calls for slow mornings and banana pancakes. 

The winter solstice is a celebration of the longest, darkest night and shortest day, a powerful transition between seasons. In Pagan times the winter solstice was referred to as ‘Yule’ and was a celebration of the Goddess (Moon) energy. It was believed that on this day, the moon would give birth to the sun.

I love this idea,

let us celebrate the moon as we welcome back the sun. 

Ingredients

  1. 2 ripe bananas mashed

  2. 1/2 cup of buckwheat flour

  3. 2 eggs

  4. 1/4 tsp. bicarb soda

  5. 2 tsp. cinnamon

  6. 1/2 tsp. cardamom

  7. pinch of salt

  8. coconut oil for frying

Method 

  1. In a large bowl mash bananas

  2. Add the flour, eggs, spices, salt and bi carb soda and mix well

  3. Add coconut oil to fry pan and pour in batter

  4. Cook on each side until golden brown

  5. Serve with coconut yoghurt, fruit and desiccated coconut

  6. Enjoy! x
