Coconut bliss balls

These bliss balls are a protein packed snack, high in fibre with added super foods such as coconut oil and goji berries. They are incredible easy to make – no need for a food processor or an oven, just throw the ingredients together, set in the fridge for about 15 minutes, and Voila!

Ingredients

  • 1 cup coconut flour

  • 1 cup almond meal/flour

  • 1/2 cup coconut oil

  • 1/4 cup goji berries

  • 1/4 cup sunflower seeds

  • 1/4 cup pumpkin seeds

  • 1/4 cup flaxseed

  • 1 cup shredded coconut

  • 1/4 cup rice malt syrup

  • A dash or two of almond milk as needed to make mixture combine more easily

Instructions

  1. Add coconut flour, almond meal, seeds and goji berries, and 3/4 a cup of shredded coconut into a bowl

  2. Add melted coconut oil and rice malt syrup to the mixture

  3. With your hands or a wooden spoon combine the mixture

  4. If your mixture is not wet enough to make into balls add a dash or two of almond milk until it all sticks

  5. Add the remaining shredded coconut onto a clean plate

  6. Form desired ball size and roll in the shredded coconut

  7. Place balls in the fridge and eat when they are firmer

  8. These keep for over a week in the fridge 🙂
