Veggie Patties with Mashed Avocado & Salsa.

My house mates and I made these delicious patties on Saturday afternoon, they are best served with sunshine and good tunes. 😉 Happy long weekend.


Veggie Patties With Salsa & Mashed Avocado.

Serves: 8 patties
  • 1.5 cup lentils
  • 1.5 cup chickpeas
  • 2 eggs
  • 1 large carrot
  • 1 medium zucchini
  • 1/2 white onion
  • 3 gloves garlic
  • 1/2 cup buckwheat flour (or amount as needed for correct texture)
  • 1/4 tsp paprika
  • 1/4 tsp chilli powder
  • salt and pepper
  • Salsa:
  • 8 cherry tomatoes
  • 1/2 red capsicum
  • 1/4 red onion
  • handful coriander
  • 1 ripe avocado
  • half a lemon
  1. Add lentils and chickpeas into a large bowl
  2. Dice onion and garlic and add to mix
  3. Grate the carrot and zucchini into mix
  4. Add paprika, chilli powder, and pinch of salt and pepper
  5. Mix in the eggs, slowly adding flour as needed to bind the patties together
  6. With your hands roll 8 pattie balls
  7. Fry on a grill plate or frying pan until golden brown on each side
  8. For the salsa:
  9. Finely dice cherry tomatoes, red onion, red capsicum, and coriander together
  10. Mash avocado and add a few squeezes of lemon
