Avocados are high in Vitamin C, Vitamin E and antioxidants, which protect your cells from free radicals. More antioxidants = less wrinkles, beautiful skin and protection against disease.

– Roast sweet potato, onion, and beetroot, topped with hummus

– Bruschetta filled avocado – cherry tomatoes, mozzarella, basil leaves

– Fried egg, sprinkled with goats cheese

– Black beans, tomatoe salsa, sour cream

  • 1 ripe avocado
  • 1 tin of tuna
  • 4 cherry tomatoes
  • Coriander
  • Olive oil
  • Apple cider vinegar
  1. Cut avocado in half and remove seed
  2. Scoop out a little more of the avocado to make a bigger hole in the centre
  3. Fill with tuna and cherry tomatoes
  4. Sprinkle with coriander
  5. Drizzle olive oil and apple cider vinegar on top
