Pumpkin, Spinach & Feta Pie With Spelt Flour Crust

As requested here is the recipe for the pumpkin, spinach and feta spelt pie I made last week.

 

INGREDIENTS FOR CRUST

– 1/3 cup of water

– 1/4 cup of olive oil

– 1.5 cups spelt flour

– 1 tsp. salt

INGREDIENTS FOR FILLING

– 1 half pumpkin

– A block of goats feta

– A whole head of spinach

– 3 cloves of garlic

– 1 brown onion

– A dash of olive oil

 

METHOD FOR CRUST

– In a large bowl add salt, water and olive and stir until salt dissolves

– Gradually add flour while mixing with a fork

– When you cannot mix with a fork any longer use your hands and knead dough for 10 mins

– Wrap dough in glad wrap and rest for 1 hour 

– Chop pumpkin up into cubes and steam until you can mash it

– Fry diced onion and garlic in olive oil and add spinach, sauté until soft

– Unfold dough from the glad wrap and twist in half for the top and bottom crust layers

– Roll dough out with a rolling pin – or if you do not have one a wine bottle works quite well 😉 

– Add the bottom layer of dough in a medium sized tin, add pumpkin, spinach and sprinkle feta on top, add your top layer of dough, pinch the two layers together around the edge of the tin to seal

– Bake in the oven on 180 degrees for 15 minutes or until hard
