Power bars

The perfect snack for your week ahead that will boost your energy and mood while providing you with fiber, protein, zinc, omega 3 fatty acids, antioxidants and iron.

These little bars take no more than 10 minutes to prepare, throw all ingredients into a bowl, mix together and freeze. I tend to add whatever I have in the cupboard so feel free to add or subtract anything you desire. Here’s what this weeks bars include:

 

Cacao energy bars

Ingredients
  • 1-cup organic rolled oats
  • ½ cup mixed nuts
  • ½ cup goji berries
  • ¼ cup buckinis
  • ¼ cup pepitas
  • 1 tbl spoon flax seed
  • 1 tbl spoon pea protein powder
  • 1 tbl spoon chia seeds
  • ¼ cup desiccated coconut
  • 1 tbl spoon of mollases
  • ¼ cup coconut oil
  • 2 tbl spoons of cacao powder
  • Splash of milk – enough so the mixture sticks together but is not too wet
Instructions
  1. Chop the nuts up into smaller pieces
  2. Add all dry ingredients in a bowl
  3. Add coconut oil, molasses and a splash of milk
  4. Stir mixture together and if too dry add another splash of milk until it is well mixed and not too wet
  5. Line a tin with baking paper and evenly spread the mixture in the tin
  6. Pop in the freezer for a few hours until it is hard and then chop it up and store in a container in the fridge or freezer for the week
