  • Roasted capsicum
  • Fresh rocket
  • Avocado
  • Feta
  • Olives
  • Sundried tomatoes

Method for pizza base

  1. Pre heat over to 180 degrees Celsius
  2. Line a baking tray with baking paper
  3. Add water to a medium saucepan and place on stove to boil
  4. Wash the cauliflower and remove the leaves
  5. Chop cauliflower into chunks and add to a food processor to form a texture similar to rice (if you do not have a food processor you can use a grater)
  6. Add riced cauliflower to boiling water and cook until soft
  7. Drain cauliflower and rinse with cold water, add cauliflower rice to a tea towel and squeeze until you remove as much water from the rice as you can – this is important, you do not want it too wet – be careful not to burn yourself as it is hot!!!!
  8. In a bowl combine dry cauliflower with remaining crust ingredients and mix with hands until well blended
  9. Spread the dough evenly on the baking tray, making the edges slightly higher for a thick crust appearance
  10. Bake for 25 minutes, or until the crust is golden, crispy on the edges and cooked through the middle
  11. Remove from oven and add pasta sauce and your choice of toppings – don’t add too many so the base is weighed down and breaks
  12. Place back into the oven and cook for a further 5 minutes or until the toppings are hot and cheese is melted.
  13. Enjoy!!

Method for pasta sauce

  2. Fry the garlic and onion until light brown
  3. Add the tinned tomatoes and leave to boil
  4. Take off the stove and leave to the side for pizza base
