Rainy days call for baking. My 4 year old friend and I baked these cacao oat cookies last week in just 30 minutes – super simple and a great healthy afternoon snack for all ages.

The ingredient list can be altered depending on what you have in the cupboard so go wild 🙂 You could also add goji berries, nut butter, pumpkin seeds, sunflower seeds or chocolate chips.

  • 2 cups of organic rolled oats
  • 2 organic eggs
  • 60 grams of oil or butter of your choice (coconut or macadamia are nice choices)
  • ÂĽ cup of coconut sugar, honey, rice malt syrup or maple syrup
  • ÂĽ tsp of vanilla essence
  • ÂĽ cup desiccated coconut
  • ÂĽ cup raisins (or any other seeds/nuts/dried fruit you desire)
  • ÂĽ cup cacao
  1. Turn the oven on to 180 degrees celcius
  2. Line a baking tray with baking paper
  3. Mix the eggs, honey and melted oil/butter in a small bowl
  4. In a separate bowl add the oats, coconut, raisins, vanilla essence and cacao
  5. Mix the wet ingredients into the dry and stir well until combined
  6. With your hands roll even cookie balls and line the tray with even spaces between cookies
  7. Bake for 20 minutes or until lightly crispy on the outside
