Winter solstice calls for slow mornings and banana pancakes.
The winter solstice is a celebration of the longest, darkest night and shortest day, a powerful transition between seasons. In Pagan times the winter solstice was referred to as ‘Yule’ and was a celebration of the Goddess (Moon) energy. It was believed that on this day, the moon would give birth to the sun.
I love this idea,
let us celebrate the moon as we welcome back the sun.
Ingredients
- 2 ripe bananas mashed
- 1/2 cup of buckwheat flour
- 2 eggs
- 1/4 tsp. bicarb soda
- 2 tsp. cinnamon
- 1/2 tsp. cardamom
- pinch of salt
- coconut oil for frying
Method
- In a large bowl mash bananas
- Add the flour, eggs, spices, salt and
bi carb soda and mix well - Add coconut oil to
fry pan and pour in batter - Cook on each side until golden brown
- Serve with coconut yoghurt, fruit and desiccated coconut
