1. 6 plums
  2. 1 tbsp. honey
  3. 2 tsps. coconut sugar
  4. 1/3 cup of water
  5. 1/4 cup of olive oil
  6. 1.5 cups of spelt flour or flour of your choice
  7. 1 tsp. salt


  1. In a large bowl add salt, water, coconut sugar and olive oil, stir until salt and sugar dissolves
  2. Gradually add flour while mixing with a fork
  3. When you cannot mix with a fork any longer use your hands and knead dough for 10 mins
  4. Wrap dough in glad wrap and rest for 1 hour 
  5. Slice plums and set aside until dough is ready
  6. Unfold dough from the glad wrap and roll out with a rolling pin
  7. Add the layer of dough to a medium sized baking dish and pinch around the top
  8. Layer plums in dish and drizzle with honey
  9. Cover with foil and bake in the oven for 20 minutes, remove foil and bake for another 10 minutes or until plums are soft and dough is cooked
  10. Serve warm with a dollop of coconut yoghurt
