Ingredients
- 6 plums
- 1 tbsp. honey
- 2 tsps. coconut sugar
- 1/3 cup of water
- 1/4 cup of olive oil
- 1.5 cups of spelt flour or flour of your choice
- 1 tsp. salt
Method
- In a large bowl add salt, water, coconut sugar and olive oil, stir until salt and sugar dissolves
- Gradually add flour while mixing with a fork
- When you cannot mix with a fork any longer use your hands and knead dough for 10 mins
- Wrap dough in glad wrap and rest for 1 hour
- Slice plums and set aside until dough is ready
- Unfold dough from the glad wrap and roll out with a rolling pin
- Add the layer of dough to a medium sized baking dish and pinch around the top
- Layer plums in dish and drizzle with honey
- Cover with foil and bake in the oven for 20 minutes, remove foil and bake for another 10 minutes or until plums are soft and dough is cooked
- Serve warm with a dollop of coconut yoghurt
